It turns out that Xerox has a major flaw in their Scan to email feature! When you scan to email with a Xerox it always gives it the same file name. According to the Local Global / (Xerox support it CANNOT be changed before sending it to email.
Here is the problem with that, after you get 100 emails with attached files that have the same name the Microsoft Outlook email client can NOT open or save any more files with the same name.
In my opinion this is a fatal flaw that makes the Xerox MFD all but useless as a corporate Scan to Email solution.
BTW, the Canon MFDs do give you a unique file name when they attach a PDF to a Scan to email.
