SMB and Appletalk are also somewhat "chatty" protocols, meaning they send out data onto the nework broadcasting their availability even when no one is asking.

As Jomama said, Network Admins like to have unnecessary protocols disabled, if the customer has no Network Admin, they probably don't care.

BTW, we are talking about very very small perfomance hits, not usually noticable to a user, but if you have hundereds of machines, then all the small things add up to a big thing =)
