Today, I was at an existing account, they are a trial law firm. They are receiving huge faxes of medical records via fax. Those faxes could sit in the exit tray for hours on end, is this a HIPAA violation?

The real question is do they care. Try going to the OmTool AccuRoute site. There you will see Omtool's justification for their software using HIPPA compliance. It refers to hospitals but the concept is the same. You might even get your attorneys to consider OmTool AccuRoute to automatically route the incoming faxes based on their workflow.
